Healthy Eating in Ras Al Khaimah: Hammour, Machboos and Karak, With the Numbers

Healthy eating in Ras Al Khaimah: calories and protein in hammour, kingfish, machboos, shawarma, dates and karak, plus RAK food days for fat loss.

MakeMyFitness Updated 9 min read

What do people in Ras Al Khaimah actually eat?

Ras Al Khaimah is a fishing emirate first, and its food still shows it. The Old Ras Al Khaimah Fish Market, in the former Customs Building on Sheikh Muhammad Bin Salem Road, opens daily from about 6 AM to 2 PM, according to Property Finder’s October 2025 guide, with kingfish, hammour, sardines, prawns and crabs depending on the season. Three more markets serve Al Maerid, Al Daqdaqa and Muairidh, the last of them busiest in the evening.

At home, Emirati cooking in RAK centres on rice and slow-cooked meat or fish. Gulf News lists the dishes most families know: machboos, spiced rice with chicken, lamb or seafood; harees, wheat and meat cooked down with ghee, a winter and Ramadan staple; balaleet, sweet vermicelli with egg for breakfast; margoogat, a tomato stew with cumin and turmeric; samak mashwi, grilled fish; and rangeena, a stovetop cake of dates, flour and ghee.

Away from home, much of daily eating happens at cafeterias in Al Nakheel, Julfar and Al Dhait: karak tea, shawarma, paratha and biryani from the South Asian kitchens that feed the emirate’s workforce. On the resort coast, from Al Marjan Island to Al Hamra Village, hotel buffets and weekend brunches are the other big influence. A fat-loss or muscle-gain plan in RAK works when it uses all three, not when it pretends they aren’t there.

Hammour or kingfish: which RAK catch suits fat loss?

Hammour suits fat loss slightly better than kingfish, because it carries more protein for fewer calories. USDA FoodData Central lists cooked grouper, the family hammour belongs to, at 118 kcal and 24.8 g of protein per 100 g, with 1.3 g of fat. Cooked Spanish mackerel, the closest USDA match for the kingfish (kanaad) sold in RAK markets, is 158 kcal and 23.6 g of protein per 100 g, with 6.3 g of fat.

Hammour (grouper), grilled118 kcal, 24.8 g protein202 g, about 238 kcalAbout 50 g
Kingfish (Spanish mackerel), grilled158 kcal, 23.6 g protein146 g, about 231 kcalAbout 34 g

Put another way, every 100 kcal of grilled hammour gives you about 21 g of protein; the same 100 kcal of kingfish gives about 15 g. Both are excellent. Kingfish’s extra fat is mostly the oily-fish kind people eat fish for, so on a muscle-gain week, alternate the two. What changes the numbers more than the species is the pan: USDA’s figures are for dry-heat cooking, and a deep-fried fillet from a cafeteria soaks up oil that isn’t in the table.

How do you buy fish at Ras Al Khaimah’s markets?

Buying fish in Ras Al Khaimah is easiest early at the Old RAK market or late afternoon at Muairidh. Property Finder says most vendors at the old market will gut and clean your fish on request, and nearby eateries will cook it. Muairidh’s market is usually open from around 4 PM to 8 PM, though times shift with the season.

  • Buy for three days, not one. Grill half the fish that night and keep the rest, cooked, for lunch boxes.
  • Ask for it cleaned and portioned. Vendors at the old market clean fish on request, which turns a whole fish into a week of 200 g portions.
  • Mind the delivery fee. Property Finder says delivery has historically cost around AED 15 for transport and ice, and some buyers collect from the market car park instead.
  • Sardines count too. They are sold whole in season, and they cook in minutes under the grill.

How many calories are in a plate of machboos?

No official calorie figure for Emirati machboos exists that we could find, so the nearest honest comparison is USDA’s chicken biryani, a similar spiced rice and chicken dish. It lists 104 kcal and 7.2 g of protein per 100 g, or about 204 kcal and 14 g of protein in a 196 g cup. A home plate of machboos is often two cups or more, which puts it near 400 kcal before any ghee on top.

That means machboos can sit in a fat-loss day if you treat it as the main carbohydrate of one meal. Keep the rice to one cup, take a second piece of chicken or fish instead of a second scoop, and add the salad and daqqus, the tomato sauce served alongside. Harees and balaleet are harder to pin down, because the ghee and sugar change from one kitchen to the next. Gulf News reports a 2015 BMC Nutrition study by Ayesha Al Dhaheri that measured how five Emirati dishes affect blood sugar, a reminder that these dishes have been studied, even if their calories haven’t been labelled.

Shawarma, karak and the cafeteria stop in Al Nakheel

A cafeteria shawarma in Ras Al Khaimah has no published label, so we use USDA’s gyro sandwich as the closest match: 368 kcal and about 22 g of protein in a 200 g sandwich. That is a reasonable lunch for most people. The two that make it a 700 kcal habit are the second sandwich and the side of fries.

Karak is mostly the milk. USDA lists whole evaporated milk at 134 kcal per 100 g, about 42 kcal in a 1 fl oz (31.5 g) pour, which is close to what a cafeteria adds to a small cup. Sugar comes on top of that and depends on who is pouring. If you have three karaks a day, asking for one of them without sugar is an easy saving that doesn’t mean giving up the habit.

Dates, hummus and coffee in the majlis

Dates are the snack you will be offered in every RAK majlis and office. USDA lists a pitted Medjool date of 24 g at about 66 kcal, with 66.5 g of sugar per 100 g. Two dates with Arabic coffee is about 132 kcal plus the coffee, a fine pre-session snack before a morning workout. A bowl left on the desk all afternoon is where it adds up: ten dates is about 660 kcal.

Hummus is denser than it looks. USDA puts plain hummus at 243 kcal per 100 g, with 17.1 g of fat and 7.3 g of protein. A tablespoon is about 36 kcal, so four tablespoons with cucumber and carrot is around 146 kcal, a good snack. Half a bowl scooped up with two pieces of bread is a meal.

Resort buffets and brunch on Al Marjan Island

If you live near Al Marjan Island or Al Hamra Village, the hotel brunch is part of the social calendar. None of the numbers above disappear at a buffet; they just arrive all at once. Three rules work without weighing anything.

  1. 1

    Start at the grill station

Fill half the first plate with grilled fish, chicken or lamb kofta. A hammour fillet is about 238 kcal and 50 g of protein, and it fills you before the desserts arrive.

  2. 2

One plate of rice or bread, not both

Pick the machboos or the bread basket. One cup of spiced rice is about 204 kcal.

  3. 3

    Take dessert to share

Luqaimat and umm ali taste the same from a shared plate. Have yours with tea rather than another karak.

A 1,200 kcal fat-loss day of Ras Al Khaimah food

This fat-loss day uses only foods from this guide, with calories and protein from USDA FoodData Central. It comes to about 1,200 kcal and 94 g of protein before salads, vegetables and a little cooking oil, which leaves room inside a typical fat-loss target. Your coach will adjust the portions to your size and training.

How should you eat around Ramadan and the Jebel Jais season?

In Ramadan, the RAK iftar table opens with dates and water, then harees or machboos. If you are training, break the fast with two dates (about 132 kcal), eat a protein-led main such as grilled fish, and keep the heavy sweets for later in the evening. Move strength sessions to the late afternoon or to after suhoor, and keep them shorter. Under UAE rules, working hours drop by two hours a day in Ramadan, which frees time for both.

From October to April the Jebel Jais trails are in season, and a five-hour guided loop is a long day’s work for your legs. Pack dates and a shawarma or a fish wrap, and eat a proper meal afterwards: the day you hike is the day to have the second cup of rice.
